The Taleggio D.O.P. is a soft blue cheese made with cow’s milk subjected to pasteurization.
Characteristics, slightly aromatic.
Pink edible natural crust, you should scrape it slightly before consumption. White or pale yellow paste.
Thin crust, smooth texture with presence of characteristic micro flora/mould. Any surface mould growth is a natural fact that does not affect the quality of the product.
The paste presents a whole structure, with some tiny eye holes, distributed unevenly, tends to be compact in texture, softer in the box just below the crust.
